Pies actually turned out very well. The general consensus was that without the rind they would be wonderful. The recipe I used called for lime zest, but I must have zested it too deeply because it came out quite bitter. The pie itself was great, and the homemade, splenda "sweetened" condensed milk worked fabulously. I'll try it again, without the zest, and if that doesn't work, I'll know it was my "juicing" technique... drop them into a blender and then squish out the juice. Third try might be the charm! Good thing it's key lime season and they're only 2 bucks a bag!
I think it might be your juicing technique as the pith is very bitter. Not that I'm such a great cook, but I can make key lime pie. I'm very impressed that you managed to make a diabetic version!
Thanks, Chris. I think your tip means that next time I try it, I'll be leaving out the rind/zest, and I'll be squeezing the limes instead of mulching them! Those were the two variables I had to consider. Or... I could juice the limes properly, and try to just zest the rind, without going too deep...
